Winter is undoubtedly upon us in Australia, as a cold snap crosses our country and unfortunately, that also brings with it colds and the flu. Our favourite way to boost our defences and strengthen our immunity is with a hearty Chicken Soup, and this one has a special ingredient for that extra boost! Our new immunity blend, TULSI.
Warm up and increase your immunity this winter warmer.
What You Need |
1 Roast Chicken ( we buy an organic pre roasted from our local supermarket)
1 small onion (organic)
1 Tablespoon of fresh ginger (organic)
1 Tablespoon of fresh Turmeric (organic)
3 cloves of fresh garlic (organic)
1 Tablespoon of olive oil
6 Cups of chicken stock liquid
2 Large carrots
2 Celery Stalks
1/2 cup of brown rice
1 Tablespoon of Tulsi
1 Tablespoon of fresh lemon juice
Salt and Pepper to taste

I have also been known to pop in extra veggies, depending on what I have in my fridge. This is a super easy recipe to alter so feel free to let your creative [soup] juices flow!
Method |
Step 1
Place a large pot on the stove, I use a dutch oven and add in the olive oil. Shred the chicken so that you only have the meat no bones, and set aside. Once the oil is hot, add in the garlic and onion and soften. Next add in the carrots and celery and brown them just slightly to enhance the flavours.
Step 2
Add in grated ginger, TULSI and rice, sauté for a minute, then add in the chicken and stock, stirring to make sure the rice and veggies aren't stuck to the bottom of the pan.
Step 3
Bring soup to boil and continue to stir.
Reduce heat to medium-low and simmer uncovered for 20-25min or until rice is fully cooked, add lemon juice, salt and pepper to taste.
Step 4
Once the soup is cooked, taste and adjust the seasonings if necessary, then fill your bowl with this hearty and immunity boosting soup and enjoy.
